Begin with the measured beet quantity so it supports the fruit instead of overpowering it.
For one serving, measure one quarter cup cooked peeled beet, one half cup pitted cherries, one half cup plain unsweetened yogurt, one quarter cup milk, and one eighth teaspoon vanilla extract. The beet must be fully cooled before blending. You can use plain ready-cooked beet from a refrigerated package or beet you have cooked and safely chilled yourself. Avoid pickled beet for this recipe because its vinegar and seasoning create a very different flavor.
Cut the cooked beet into small cubes and check the cherries carefully for pits. Even fruit sold as pitted can deserve a quick visual check as you portion it. Wash fresh cherries before preparing them, and follow any preparation guidance on a frozen package. Place milk and yogurt in the blender first, then add beet, cherries, and vanilla. Stop before lifting the lid. If small beet pieces remain, blend a little longer or chop them more finely next time. Add cold water one tablespoon at a time if your blender needs more liquid. A small blender may work better with the fruit briefly softened according to its instructions, rather than being forced to process a large frozen mass. Keep the amount of added liquid visible and measured.
Taste the smoothie before deciding whether to change the recipe. Cherries vary in tartness, and cooked beet has a flavor that some people prefer in smaller amounts. You can reduce the beet to two tablespoons on your next batch if the earthy note is too strong. Do not keep adding sweetener to cover a flavor you do not enjoy; a smaller beet portion is a more direct adjustment.
Serve the drink as a snack or alongside other food at breakfast. Its vivid color does not make it a complete meal or establish a particular nutrient total. If you want a smaller serving, divide the mixture into two glasses. Keep toppings simple, or leave them out, so the smoothie remains easy to drink and the measured recipe is easy to repeat.
Prepare it close to serving and refrigerate leftovers promptly in a covered container. Beet can stain boards, cloths, and light surfaces, so wipe splashes while fresh and rinse the blender after use.
