This chicken lentil vegetable lunch combines cooked chicken, lentils, brown rice, roasted carrots, broccoli, spinach, tomatoes, and lemon-yogurt sauce. For someone who already uses an intermittent-fasting schedule safely, it can be a balanced way to begin an eating window. It does not make fasting safe for everyone and cannot guarantee weight loss or a health result.
Ingredients for two bowls
Use about 8 ounces of cooked chicken breast, 1 cup cooked lentils, 1 cup cooked brown rice, 2 carrots, 2 cups broccoli, 2 cups spinach, and 1 cup tomatoes. For the sauce, stir 1/2 cup plain yogurt with lemon juice, chopped herbs, black pepper, and a small pinch of salt if appropriate. Divide ingredients evenly.
Prepare and assemble
Roast carrots and broccoli at 425°F (220°C) until tender, then cool promptly. Place brown rice and spinach in each bowl, followed by lentils, chicken, roasted vegetables, and tomatoes. Keep the sauce separate until serving. After a long gap without food, eating slowly may be more comfortable than rushing through a large meal.
Include enough food
An eating window is not a reason to remove needed carbohydrate, fat, or total energy. Chicken, lentils, and yogurt contribute protein, while lentils, rice, and vegetables contribute carbohydrate and fiber. Add fruit, whole-grain bread, nuts, seeds, or another side when needed. Stop eating when comfortably satisfied rather than trying to compensate for the fasting period.
Flexible substitutions
Turkey, fish, tofu, eggs, chickpeas, or white beans can replace chicken. Quinoa, barley, potatoes, or whole-grain pita can replace brown rice. Cabbage, peppers, green beans, zucchini, or leafy greens can replace some vegetables. Use lactose-free yogurt or a plant-based alternative when appropriate.
Food safety and storage
Cool chicken, rice, lentils, and roasted vegetables promptly and refrigerate within two hours. Keep the bowl at or below 4°C (40°F), including during transport with an insulated bag and frozen cold pack. Eat within three to four days when continuously chilled. Discard food left warm for an uncertain period.
Fasting safety context
Break the fast and seek help if you feel faint, confused, severely weak, or otherwise unwell. Fasting may be inappropriate during pregnancy or breastfeeding, for children and adolescents, for people with a history of eating disorders, or for people using glucose-lowering medicines unless supervised by a clinician. Illness, intense training, and shift work can also change safety needs. Hydration matters, but water does not replace needed food.
