This chicken white bean kale soup combines cooked chicken, white beans, kale, carrots, celery, tomatoes, and herbs in one practical pot. It can become several lunches and can be paired with whole-grain toast, fruit, yogurt, or another side according to appetite. It is not a special weight-loss food for adults over 40 and cannot guarantee a health or body-weight result.
Ingredients for four servings
Use about 12 ounces of cooked chicken breast, 1 can white beans drained and rinsed, 4 cups chopped kale, 2 carrots, 2 celery stalks, 1 can no-salt-added diced tomatoes, 4 cups lower-sodium broth, and 1 tablespoon olive oil. Add garlic, dried herbs, black pepper, and a small pinch of salt if appropriate.
Cook the soup
Warm olive oil in a large pot, then cook chopped carrots and celery until they begin to soften. Add garlic, tomatoes, broth, and beans. Simmer for about 15 minutes. Stir in chopped cooked chicken and kale, then simmer until the kale is tender and the soup reaches a safe serving temperature. Add lemon juice or herbs at the end for brightness.
Cool and pack safely
Divide hot soup into shallow containers so it cools more quickly. Refrigerate within two hours and keep at or below 4°C (40°F). For transport, use a leak-resistant chilled container with a frozen cold pack, or reheat until steaming and transfer to a preheated insulated food jar. Eat refrigerated soup within three to four days. Reheat leftovers thoroughly only as needed.
Flexible substitutions
Turkey, tofu, lentils, chickpeas, or extra white beans can replace chicken. Spinach, chard, cabbage, or frozen mixed greens can replace kale. Zucchini, green beans, peppers, or mushrooms can replace some vegetables. Use water plus herbs when suitable broth is unavailable, or add barley, brown rice, or potatoes for a more substantial soup.

Nutrition needs do not change at the same age for everyone. Chicken and beans contribute protein, while beans and vegetables contribute fiber.
