Add a grain, bread, beans, fruit, or another carbohydrate when it suits your needs.

Mix only until combined, shape with clean hands or a scoop, and wash hands and surfaces after contact with raw poultry. Bake the meatballs until browned and fully cooked. Let the cooked foods stop steaming before packing, but do not leave them at room temperature for an extended period. Divide the meatballs and vegetables among shallow containers so they cool promptly. Pack a yogurt-herb sauce in small leakproof cups and keep it separate until serving. Use a dairy-free sauce if needed, and review every ingredient for personal allergies.
Refrigerate the portions you will use soon. For later lunches, freeze the meatballs and suitable roasted vegetables promptly in labeled containers. Cucumber, leafy greens, and yogurt sauce generally keep a better texture when added fresh after thawing. Date each box, follow conservative storage guidance, and discard food that has been left out too long or shows signs of spoilage.
Thaw frozen portions in the refrigerator, not on the counter. Reheat the turkey and cooked vegetables thoroughly until steaming, then add lemon, herbs, or chilled sauce. Avoid repeatedly warming and cooling the same portion. If taking a box away from home, use an insulated bag and cold pack until refrigeration is available.
