Ginger Chicken Breakfast Congee with Scallions

A gently simmered rice porridge with shredded chicken, ginger, and scallions for a savory breakfast. #ChickenCongee #SavoryBreakfast #BreakfastIdeas #RicePorridge

Congee is a soft rice porridge that can make a comforting savory breakfast. This simple chicken version uses ginger for aroma and scallions for a fresh finish. The rice cooks with much more liquid than a side dish of steamed rice, so the grains soften and release starch into the broth. The result should be spoonable and gentle in texture, with room to adjust the thickness to your preference. For two servings, gather one half cup of uncooked white rice, four cups of water or unsalted chicken broth, one cup of shredded cooked chicken, a one-inch piece of fresh ginger, and two scallions. A small amount of reduced-sodium soy sauce is optional at the table. Start with a lightly seasoned liquid because the porridge reduces as it cooks, concentrating whatever salt is already present. Rinse the rice and drain it. Peel the ginger and cut it into thin slices so you can remove them later if you prefer. Put the rice, ginger, and liquid in a saucepan with enough space for bubbling. Bring to a gentle simmer, then lower the heat. Cook partly covered, stirring occasionally and scraping the bottom to prevent sticking. Add more hot water whenever the mixture becomes too thick before the rice has softened. The cooking time depends on the rice and the texture you want, but allow roughly forty-five minutes to an hour rather than treating this as a rushed weekday task. The grains should be very soft and beginning to break down. Stir more often toward the end, when the porridge is thicker. If it looks like ordinary cooked rice with very little surrounding liquid, add water and continue gently until it becomes a flowing porridge. Add the shredded cooked chicken and stir through. Heat until the chicken is thoroughly hot; reheated chicken should reach 165 degrees Fahrenheit. Remove any large ginger slices if desired. Ladle into bowls and scatter thinly sliced scallions over the top. Taste before adding soy sauce, and use only the amount you want. Keep toppings simple so the chicken, rice, and ginger remain the main flavors. This breakfast combines a grain with a protein food. It is not presented as a remedy for illness, a detox meal, or a guaranteed weight-loss food. The serving size can change with your appetite, and nutrition depends on the broth and chicken you use. If you want vegetables alongside, a separate small plate of cooked greens can add variety without changing the porridge's soft texture. Congee thickens noticeably as it cools. For another morning, cool it promptly in shallow portions and refrigerate it, keeping it out of the temperature range where cooked rice can sit warm for long periods. Reheat a portion with extra water, stirring until hot throughout. Do not leave a large pot on the stove overnight. Making the base when you have time, then storing it carefully, is the practical way to turn a slow simmer into an easier breakfast routine.

Simmer rice until soft and spoonable, then add cooked chicken and finish with sliced scallions.
