If using chicken, follow authoritative guidance for safe preparation and final internal temperature; do not rely only on color. If using tofu, drain it and cut it into pieces. Toss the vegetables and chickpeas with a small amount of oil and seasoning. Season the chicken or tofu separately so raw poultry juices do not contaminate other ingredients during preparation. Arrange everything with enough space for heat to circulate. Depending on the chicken cut and vegetable size, some ingredients may need to enter the oven at different times. Roast until the vegetables are tender and browned and the protein is safely cooked. Finish with lemon and herbs. Serve the tray as it is or add rice, couscous, bread, potatoes, yogurt sauce, tahini, or another food to match appetite. Portion needs vary, and the visual arrangement is not a prescription. Add more food when the meal is not satisfying.
Cool leftovers promptly and refrigerate them in clean covered containers according to local guidance. Reheat thoroughly, and avoid repeatedly warming and cooling the same food.
