Kale Egg Breakfast Peppers with Parmesan
Roasted pepper halves hold a warm kale and egg filling for a savory breakfast. #BreakfastPeppers #LowCarbRecipes #EggBreakfast #VegetableBreakfast
Bell pepper halves make a colorful serving shell for a savory egg breakfast. Roasting the pepper before adding the filling solves a common problem: the vegetable has time to soften without forcing the eggs to stay in the oven too long. Kale adds texture, and a small amount of Parmesan finishes the dish. The result is a lower-carb recipe direction with a vegetable base rather than a bread shell.
For one serving, gather one medium red bell pepper, two eggs, one cup of finely chopped kale, one tablespoon of grated Parmesan, two teaspoons of olive oil, and two tablespoons of water. Black pepper is optional. Cut the bell pepper lengthwise into two halves, keeping the sides intact, and remove the seeds and white ribs. Strip tough kale stems before chopping so the filling is easy to eat.
Heat the oven to 400 degrees Fahrenheit. Brush the pepper halves with one teaspoon of oil and place them cut side up in a small baking dish. Roast until they begin to soften but still hold their shape, starting to check around fifteen minutes. The exact time depends on the pepper's thickness. If liquid collects inside, carefully tip it out before filling. A soft shell is more pleasant than a raw, crunchy pepper surrounding cooked eggs.
While the shells roast, heat the remaining oil in a skillet. Add the kale and water, cover briefly, and cook until the leaves are tender. Remove the lid and let excess moisture evaporate. Beat the eggs separately, lower the heat, and pour them into the kale. Fold gently until the eggs are fully set with no liquid remaining. Add black pepper if desired, remembering that Parmesan will add its own seasoning.
Spoon the cooked filling into the roasted pepper halves and scatter Parmesan over the top. Return the dish to the oven briefly to warm everything together and soften the cheese. Since the eggs are already cooked, this final stage should be short. Serve on a plate with a knife and fork rather than trying to lift a soft pepper as a hand-held wrap. Cut into the shell and filling together for each bite.
Eggs and Parmesan contribute protein, while pepper and kale provide vegetables. No precise nutrition total is attached to the recipe because the actual ingredient sizes and products vary. The serving can be adjusted or accompanied by another food according to appetite. A lower-carb presentation does not require banning a side of bread if that is something you want with breakfast.
Roast extra pepper halves during another cooking session if you would like to shorten morning preparation, then cool and refrigerate them promptly. Reheat the shells before adding freshly cooked filling. Spinach can replace kale, but it usually needs less time and careful draining. Refrigerate leftovers promptly and reheat thoroughly. The useful technique is separating the two cooking tasks: soften the pepper at higher oven heat, then cook the eggs gently on the stove. Each ingredient gets the treatment it needs instead of sharing one unsuitable baking time.
Roast the pepper shells first, then fill them with cooked kale and eggs and finish with Parmesan.
