Leek Feta Breakfast Ramekin with Toast and Tomato
An individual leek and feta egg bake with toast and tomato offers a flexible breakfast starting point. #BreakfastIdeas #PortionControl #EggBreakfast #MealPlanning
An individual ramekin makes it easy to see what went into an egg breakfast, but the dish does not define how much you should eat. This leek and feta bake starts with a small amount of softened leek, eggs, and crumbled cheese. Wholegrain toast and fresh tomato sit alongside it, so the parts of the meal stay easy to adjust. The goal is a practical breakfast format with room for your own appetite.
For one ramekin, gather 2 eggs, about one-third cup thinly sliced leek, 1 tablespoon milk, 2 tablespoons crumbled feta, black pepper, and a little olive oil for the pan and dish. Have wholegrain bread and a ripe tomato ready to serve. Choose an oven-safe ramekin large enough to hold the mixture with space above it, since the eggs can puff during baking. A shallow baking dish also works, although timing will change.
Trim the leek and separate the layers under running water to remove trapped grit. Slice the clean white and light green parts thinly. Warm a little oil in a small skillet and cook the leek gently until soft, adding a spoonful of water if it starts browning too quickly. Let the cooked leek cool slightly before mixing it into the eggs. This step avoids tough pieces in an otherwise tender bake.
Heat the oven to 350 degrees Fahrenheit and lightly grease the ramekin. Beat the eggs with the milk and pepper, then stir in the softened leek and most of the feta. Pour into the dish and scatter the remaining cheese on top. Set the ramekin on a baking sheet for easier handling. Bake until the center is fully set; begin checking around 20 minutes, allowing more time for a deeper dish.
Toast the bread while the egg bake finishes, and cut the tomato into wedges or slices. Let the ramekin stand briefly before serving because the ceramic stays hot. Place it on a heat-safe plate with the toast and tomato. Cutting toast into fingers can make it convenient to eat alongside the eggs, but changing its shape does not change the amount of bread you have served.
Use the plated breakfast as a starting point rather than a fixed allowance. You might want another slice of toast, fruit, yogurt, or more of the egg mixture on a different morning. If you are preparing several ramekins, their equal appearance does not mean that every person needs an identical meal. Notice how the breakfast fits your schedule and hunger instead of using the container size as a measure of success.
To reduce morning work, wash and cook the leek ahead and keep it refrigerated in a covered container. Assemble the eggs when you are ready to bake. Leftover cooked portions should be cooled promptly and refrigerated, then reheated until hot throughout. Keep fresh tomato and toast separate for a better texture. This recipe offers a repeatable way to prepare breakfast, while leaving the serving decision flexible and free of promises about weight loss.
An individual egg bake can be paired with more toast or other food to suit your morning.
