Stir midway through microwave heating to reduce cold spots. Add the cool vegetables and sauce after reheating. Use frozen cold packs when transporting the lunch without a refrigerator and discard food left warm for more than two hours.
Bulgur contains wheat and tahini contains sesame, so the pictured bowl is not suitable for people avoiding those allergens. Quinoa, brown rice, or certified gluten-free grains can replace bulgur. A sunflower-seed or yogurt-herb sauce can replace tahini when appropriate. Chickpeas or white beans can replace lentils, and roasted zucchini, cauliflower, mushrooms, or peppers can replace eggplant. Portions are flexible. Add fruit, another whole-grain side, or yogurt when a larger meal is needed, and reduce one component for a smaller lunch.
