A microwave sweet potato chickpea bowl is a no-fuss lunch built from a fiber-rich carbohydrate, plant protein, vegetables, and sauce. It is useful when an oven or long cooking session is impractical. The meal can support a balanced eating pattern, but it is not low-carb, a detox, or a way to selectively reduce abdominal fat.
Wash the sweet potato and pierce it several times with a fork so steam can escape. Place it on a microwave-safe plate. Let it stand before handling because steam and the plate may be very hot.
