Heat the oven to 350 degrees Fahrenheit. Chop the apricots into small pieces so they distribute evenly instead of sinking as large sticky chunks. If they are very firm, soften them briefly in warm water, then drain and pat dry before measuring into the batter. Excess soaking liquid would change the batter consistency, so avoid adding it along with the fruit.
Whisk the egg, ricotta, milk, oil, sugar, and vanilla in a bowl until combined. In a second bowl, stir the oat flour and baking powder together. Add the dry mixture to the wet ingredients and fold just until no dry patches remain. Stir in the apricot pieces. The batter should be thick enough to spoon into the pan but not so stiff that it holds a dry mound. Add a small splash of milk if needed.
Divide the batter among the prepared mini muffin cavities, filling them roughly three quarters full. Bake until the tops are lightly golden and the centers are set, beginning to check around twelve minutes. A tester should come out without wet batter. Allow the muffins to rest briefly in the pan, then move them carefully to a rack so steam does not collect underneath and make the bases soggy.
Serve a few muffins as a breakfast snack, or pair them with plain yogurt or fruit if you want a larger meal. Egg and ricotta contribute protein, oats provide a grain component, and apricots add fruit. The recipe includes a small amount of sugar and oil, which should remain part of any personal nutrition calculation. No calorie or protein total is invented for the batch.
For a variation, use chopped dried cherries instead of apricots, keeping the pieces small. Let the muffins cool before storing, then refrigerate them in a covered container and use while fresh, or freeze portions for later. Thaw safely and reheat until warm throughout if desired. The practical advantage is portion flexibility: a modest batch gives you a ready snack without requiring a large pan of nearly identical breakfasts for the entire week.
