There are simple ways to adapt the recipe. Use chopped kale in place of spinach, allowing it extra cooking time, or replace feta with a measured amount of shredded cheese already in your refrigerator. For a dairy-free version, omit the feta and add lemon zest or extra herbs. Do not assume that a substitute has the same nutrition as the original ingredient.
For quicker mornings, clean and slice the mushrooms ahead and keep them refrigerated in a covered container. Cook the egg filling fresh when possible, and assemble only when ready to eat so the pita stays pleasant. If you are still hungry afterward, treat that as useful feedback when planning the next meal.
