Gather sixteen ounces plain seitan, eight ounces sliced mushrooms, three cups cooked pearl barley, two cups peas, one sliced onion, two minced garlic cloves, one tablespoon oil, one teaspoon dried thyme, one-half cup low-sodium vegetable broth, black pepper, and chopped parsley. Optional additions include lemon zest, mustard, or a spoonful of plain yogurt. Check packaged seitan and broth for sodium and allergens before seasoning. Pat the seitan dry and cut it into bite-size strips. Warm half the oil in a wide skillet over medium-high heat.
