For two bowls, use one cup of rolled oats, two cups of water plus extra as needed, eight ounces of firm tofu, four ounces of fresh shiitake mushrooms, two teaspoons of neutral oil, two teaspoons of reduced-sodium soy sauce, and one sliced scallion. Black pepper is optional. Remove any tough mushroom stems and slice the caps. Drain the tofu and blot it with a clean towel, then crumble it into uneven bite-size pieces rather than a fine paste.
Start the oats in a saucepan with the measured water. Bring them to a gentle simmer and cook according to the package directions, stirring occasionally. Add small splashes of water if they become stiff before the flakes are tender. Aim for a spoonable base that spreads slowly in the bowl. Keep the oats covered off the heat for a moment while you finish the topping, then loosen them again if necessary.
Meanwhile, heat the oil in a skillet over medium heat. Add the mushrooms in a single layer and let them cook without constant stirring until they begin to brown. Add the tofu and continue cooking, turning the pieces occasionally. The goal is warmed tofu with some golden surfaces, not a uniformly crisp coating. Stir in the soy sauce near the end so it seasons the food without burning on an empty part of the pan.
Divide the oats between two shallow bowls. Arrange the tofu and mushrooms over the top, leaving some oats visible, and finish with sliced scallion. Taste before adding more seasoning. Soy sauces differ in saltiness, and a small measured amount often gives enough flavor once it coats the topping. If the bowl needs moisture, add a spoonful of hot water rather than automatically adding more sauce.
