Sesame Soba and Edamame Lunch Jars

Layer sesame-lime dressing, edamame, cabbage, carrots, cucumber, and soba noodles into three colorful chilled lunch jars.

Whisk a light dressing with lime juice, a teaspoon of sesame oil, warm water, ginger, and lower-sodium soy sauce. Divide it among three wide-mouth jars. Add 1 1/2 cups shelled edamame, shredded red cabbage, carrots, cucumber, and about 6 ounces of cooked and cooled buckwheat soba noodles. Keep herbs and sesame seeds on top, then seal and refrigerate. Shake into a bowl before eating. Transport the jars in an insulated lunch bag with cold packs and return them to refrigeration promptly.
