Bake Smoky Tempeh with Black Beans and Corn

This smoky tempeh-bean bake combines two plant protein foods with corn, tomatoes, and peppers in one casserole. Avocado, lime, and herbs are added after baking for contrast. Gather sixteen ounces tempeh, two drained and rinsed fifteen-ounce cans black beans, two cups frozen or canned corn, one chopped bell pepper, one chopped onion, one fourteen-ounce can diced tomatoes, one tablespoon oil, two teaspoons smoked paprika, one teaspoon ground cumin, black pepper, and a small pinch of salt. For serving, have one avocado, one lime, and chopped cilantro or parsley.
Heat the oven to 400 degrees Fahrenheit, or about 200 degrees Celsius. Crumble the tempeh into bite-size pieces. Warm the oil in a skillet and cook the onion and pepper until they begin to soften. Stir in smoked paprika and cumin, then combine the vegetables with tempeh, black beans, corn, and tomatoes in a lightly oiled baking dish.
Cover and bake for about twenty minutes, then uncover and continue until the mixture is steaming and lightly browned at the edges, usually another ten to fifteen minutes. Oven performance and dish depth change timing. Stir once if the edges dry out, and add a splash of water or tomato juice when needed. Taste before adding more salt because beans, tempeh, and canned tomatoes vary.
Top portions with avocado, lime, and herbs. Serve in tortillas, over rice or quinoa, with potatoes, or beside salad and fruit. Tempeh and black beans contribute protein and fiber, but individual protein needs differ. Soy is a major allergen, and tempeh may contain grains, so inspect labels. A soy-free version can use extra beans or another suitable cooked protein food.
Cool leftovers promptly in shallow covered containers and refrigerate for three to four days. Reheat until steaming throughout. Store avocado separately and cut it close to serving. Do not leave the casserole at room temperature for extended periods. People with kidney disease, diabetes, allergies, or other nutrition-sensitive conditions should adapt ingredients and portions with individualized guidance.
