Bake a Strawberry Buckwheat Sheet-Pan Pancake
Whisk a buckwheat pancake batter, fold in strawberries, bake it on a sheet pan, and slice into easy breakfast squares.
A sheet-pan pancake removes the need to stand over a skillet and flip individual portions. This strawberry buckwheat version bakes as one slab, then cuts into squares for breakfast or meal prep. Buckwheat is naturally gluten-free, but packaged flour can have cross-contact, so choose certified gluten-free ingredients when needed. The recipe makes about eight squares, with the amount per person guided by appetite and side dishes.
Gather one and one-half cups buckwheat flour, two teaspoons baking powder, one-half teaspoon cinnamon, a small pinch of salt, two eggs, one and one-half cups milk or a fortified suitable alternative, two tablespoons neutral oil or melted butter, one teaspoon vanilla, and one and one-half cups sliced strawberries. Have plain yogurt and extra berries available for serving if desired. Check all labels for allergies and use pasteurized eggs and dairy when recommended.
Heat the oven to 425 degrees Fahrenheit, or about 220 degrees Celsius. Lightly oil a rimmed quarter-sheet pan or line it with baking paper that is rated for the oven. Whisk the flour, baking powder, cinnamon, and salt in a large bowl. In another bowl, whisk the eggs, milk, oil, and vanilla. Pour the wet mixture into the dry ingredients and stir just until no dry pockets remain.
Fold in about one cup of the strawberries without overmixing. Spread the batter evenly in the prepared pan and arrange the remaining fruit over the top. Bake for twelve to sixteen minutes, until the center is set and a tester comes out without wet batter. Pan size and oven performance change cooking time, so use appearance and doneness rather than relying only on the clock.
Cool for several minutes before slicing. Serve warm with yogurt, berries, nut or seed butter, or another preferred side. Add eggs, tofu, or extra yogurt if a higher-protein meal is wanted. Buckwheat has a distinct earthy flavor; mixing it with another flour is possible, but the liquid may need adjustment. The illustrated square is an example rather than a prescribed portion.
Cool leftovers promptly. Refrigerate covered squares for three to four days or freeze them in a single layer before transferring to a freezer container. Reheat until hot in a toaster oven, oven, or microwave. Do not leave yogurt or cut fruit at room temperature for extended periods.
