This strength-day lean beef, quinoa, broccoli, pepper, and spinach lunch bowl combines lean whole-cut beef, cooked quinoa, broccoli, roasted bell pepper, spinach, and a measured savory dressing. For two lunch portions, cook the quinoa and vegetables, cook the beef separately, rest and slice it on a clean board, then divide the meal between shallow containers.
