Roast or steam broccoli until tender-crisp, then cool both foods promptly. Put dressing in the bottom of each jar, followed by rice, broccoli, carrot, cabbage, edamame, and tofu on top. Shake into a bowl at lunchtime.
Flexible substitutions
Tempeh, chicken, eggs, shrimp, chickpeas, or white beans can replace tofu. Quinoa, barley, farro, bulgur, or whole-grain noodles can replace brown rice. Peppers, cucumber, green beans, snap peas, or leafy greens can replace some vegetables. Use a citrus vinaigrette without sesame or soy when those ingredients are not suitable.
Food safety and storage
Refrigerate cooked rice, tofu, broccoli, and edamame within two hours of cooking. Keep the jar at or below 4°C (40°F), including during transport in an insulated bag with a frozen cold pack. Prepared jars are generally best eaten within three to four days when continuously chilled. Wash produce before cutting and discard food left warm for an uncertain period.
