Add the zucchini, corn, garlic, and smoked paprika. Cook for five minutes, stirring occasionally, until the zucchini begins to soften. Pour in the tomatoes with their juice. Reduce the heat and simmer for another five to eight minutes until the vegetables are tender and the mixture is not watery. Check the turkey temperature again if needed.
Taste and add black pepper or herbs. Spoon the skillet mixture over polenta or brown rice. For extra produce, serve a simple salad or fruit alongside. Let hunger and activity guide how much base and topping you use rather than trying to match a fixed image.
Cool leftovers promptly and refrigerate in covered containers for three to four days. Store the polenta or rice separately if possible. Reheat both until steaming. Do not partially cook turkey for later completion, and avoid cross-contamination by washing hands and cleaning tools that touched raw meat.
