Make 10-Minute Salsa Couscous with Chickpeas
Soak quick-cook couscous, then stir in chickpeas, corn, spinach, salsa, and lemon for a fast flexible bowl.
This ten-minute salsa couscous bowl uses quick-cook couscous and convenient pantry or freezer ingredients. Chickpeas, corn, spinach, salsa, and lemon turn the grain into a colorful lunch or dinner component with very little chopping. The recipe makes about three moderate servings, although appetite and side dishes will change what a serving looks like. Couscous is made from wheat, so choose cooked quinoa, brown rice, or another suitable grain if gluten must be avoided.
Gather one cup dry quick-cook couscous, one cup boiling water or low-sodium broth, one drained and rinsed fifteen-ounce can of chickpeas, one cup thawed frozen corn, two packed cups baby spinach, three-quarters cup salsa, one tablespoon olive oil, and the juice of half a lemon. Optional additions include chopped cilantro, pumpkin seeds, avocado, plain yogurt, cheese, or a favorite hot sauce. Check the salsa and broth labels when sodium is a concern.
Place the couscous in a heat-safe bowl. Pour over the boiling water, cover tightly, and leave it for about five minutes or for the time on the package. Keep the bowl on a stable surface and use care with steam. Fluff the hydrated couscous with a fork. If the grains are still firm, add a small splash of hot water, cover again, and wait another minute or two.
Stir in the chickpeas, corn, spinach, salsa, olive oil, and lemon juice. The heat from the couscous will soften the spinach, but the bowl can also be returned to a microwave-safe container and heated until steaming if a hotter meal is preferred. Taste before adding salt because salsa, canned beans, and broth can already contain it. Add pepper, herbs, or hot sauce to suit the diners.
Serve the mixture in bowls and add any optional topping. For more energy or satisfaction, increase the portion, add avocado, yogurt, cheese, seeds, eggs, tofu, chicken, or another familiar protein food. The chickpeas contribute protein and fiber, but one recipe cannot meet every person's needs. People with diabetes, kidney disease, food allergies, or another condition affecting nutrition should use their individualized plan.
Refrigerate leftovers promptly in a shallow covered container and use them within three to four days. Reheat until steaming or enjoy chilled if all ingredients were handled safely. Do not leave the cooked grain and beans at room temperature for extended periods. If packing the bowl, use an insulated bag with a cold source.
