Egg Pea Breakfast Sandwich That Packs for Lunch
Chopped eggs and peas make a breakfast sandwich that can also travel in a chilled lunch box. #BreakfastSandwich #PackableLunch #EggRecipes #MealPrepIdeas
A breakfast sandwich can also solve lunch when the filling holds together and the packing is planned. Chopped eggs and peas create a soft mixture with a little sweetness, while plain yogurt and mustard bring it together without needing a heavy dressing. This version is served cold, so there is no expectation that a hot sandwich will stay warm in a bag until midday. The lunch connection is part of the recipe, not an unrelated afterthought.
For two sandwiches, use three hard-cooked eggs, one half cup of cooked peas, two tablespoons of plain Greek yogurt, one teaspoon of mustard, four slices of whole grain bread, and a little black pepper. Add two dry lettuce leaves if you like a crisp layer. The eggs should have firm whites and yolks, and both the eggs and peas should be cooled before you make a filling intended for chilled storage.
Peel and chop the eggs into small pieces. Put the peas in a bowl and crush some of them lightly with a fork, leaving others whole for texture. Add the yogurt, mustard, and black pepper, then fold in the chopped eggs. Stir gently rather than beating the mixture into a paste. Taste before adding salt, since mustard and bread already bring seasoning and brands differ.
Divide the filling between two slices of bread. Add the lettuce, if using, and close with the remaining slices. For breakfast at home, serve immediately. For lunch, wrap the sandwich or place it in a snug food container and refrigerate it until departure. Carry it in an insulated lunch bag with a cold source, and put it back into a refrigerator when one is available. A sandwich containing eggs and yogurt should not spend the morning sitting warm on a desk.
If you prefer firmer bread, toast it lightly and let it cool fully before assembly. Warm toast can create condensation inside a closed container, which defeats the effort to keep the bread crisp. You can also pack the filling separately and assemble at lunchtime. That option is especially helpful with delicate bread or a longer trip.
Eggs and yogurt contribute protein, peas add vegetable texture and fiber, and whole grain bread provides the grain component. These ingredient roles do not establish a precise calorie total or guarantee a particular weight outcome. Adjust the serving to your appetite and add fruit or another side if that makes the meal more suitable for your day.
Chopped green beans can replace peas if you want a different texture, but drain and cool them well. Dill can join the mustard, or the mustard can be reduced if its flavor is too strong. Prepare only the amount you can keep chilled and use while fresh. The practical lesson is that a meal can work at two times of day when its temperature and texture are planned from the beginning: cool the filling, keep the bread dry, and maintain refrigeration.
Cool the eggs and peas before mixing the filling, then pack the sandwich chilled for lunch.
