Start with the smoothie portion
Measure one half cup peeled orange pieces, three quarters cup plain silken tofu, one half cup unsweetened soy milk, and one eighth teaspoon vanilla extract. Remove orange seeds and any tough central membrane before measuring. Follow the tofu package directions and use a product appropriate for this preparation. Firm tofu will give a different texture and is not the intended ingredient here.
Smooth the base first
Pour soy milk into the blender and add the tofu. Blend briefly until smooth, then stop and add orange and vanilla. Blend again until the fruit pieces are broken down. A little citrus pulp may remain, which is normal for a drink made with fruit rather than strained juice. If the mixture is too thick, add cold water one tablespoon at a time after checking it.
Assemble the lunch salad
In a separate bowl, combine one half cup cooked lentils, one half cup cooked shelled edamame, one half cup diced cucumber, and one half cup chopped tomato. Dress with one teaspoon olive oil and one teaspoon lemon juice, then add a little chopped parsley and one tablespoon diced red onion if desired. Use cooked ingredients that have been safely cooled and stored. Add bread or another side according to your appetite.
Keep the flavors distinct
The orange smoothie should taste gently citrusy, while the salad remains savory. Do not add the salad dressing, lentils, or edamame to the blender. If the orange is especially tart, try a sweeter ripe orange next time or replace a small measured part with banana. Vanilla supplies aroma but cannot remove acidity, so adding more extract is not the best way to soften a sharp batch.
Plan the packing order
Put the salad in a covered lunch container and the smoothie in a separate sealed bottle. Refrigerate them until leaving and maintain cold storage during transport. Stir the salad and gently shake the drink before serving. Blending close to mealtime gives the freshest texture; if that is impractical, prepare only the amount you intend to use and keep it chilled.
Soy milk, tofu, lentils, and edamame contribute the protein-containing ingredients, but their exact nutrient totals vary by product and portion.
