Two squares can be a starting serving, but choose the portion and any sides according to your appetite rather than the number of cuts alone.
Heat the oven to 350 degrees Fahrenheit. If the quinoa was refrigerated, break up any clumps with a fork. Use quinoa that was cooled promptly and stored safely. Drain jarred roasted peppers and pat them dry with a clean towel before chopping. Too much retained liquid can leave soft pockets in the bake and make the squares more likely to fall apart during packing.
Whisk the eggs and milk in a bowl until combined. Stir in the quinoa, chopped pepper, Parmesan, and parsley. Pour into the prepared dish and spread the solids evenly so one corner does not receive all the grain or vegetables. Bake until the center is set, beginning to check around twenty minutes. For lunch preparation, cool the remaining portions promptly and refrigerate them in a covered shallow container. Pack chilled with a cold source and keep refrigerated until eating. If reheating, heat the portion thoroughly rather than warming only the edges.
