Start by choosing cooked or canned lentils. If using canned lentils, drain and rinse them unless sodium restriction guidance says otherwise. Cut the eggplant into evenly sized cubes so the pieces cook at a similar rate. Chop the peppers, tomatoes, onion, garlic, and parsley before heating the pan. Keeping ingredients ready makes the cooking process calmer and helps prevent the aromatics from burning.

Finish with parsley, black pepper, lemon juice, or another bright seasoning. Taste before adding salt because canned lentils, broth, or bread may already contribute sodium. Serve the skillet warm with whole-grain bread, brown rice, quinoa, or potatoes according to appetite and preference. Yogurt, tahini, or a dairy-free alternative can add creaminess if suitable.
Adjust the recipe rather than treating it as a rigid rule. Zucchini can replace some eggplant, beans can replace lentils, and spinach can be folded in near the end. For more heat, add chili flakes; for less smoke, reduce the paprika. Portion needs vary with hunger, activity, health conditions, medication, age, and personal goals.
Cool leftovers promptly in shallow containers and refrigerate or freeze according to local food-safety guidance. Reheat until steaming hot. If a large batch will not be eaten within a few days, freeze individual portions early rather than waiting until the end of the storage window.
