Ingredients for two bowls

For the sauce, thin 2 tablespoons tahini with lemon juice and water, then add black pepper and a small pinch of salt if appropriate.
Roast one tray

Cool roasted ingredients promptly and refrigerate within two hours. Keep packed bowls at or below 4°C (40°F), including during transport in an insulated bag with a frozen cold pack. Eat within three to four days when continuously chilled. Wash produce before cutting and discard food left warm for an uncertain period.
