Pineapple Silken Tofu Smoothie with Toasted Coconut

Silken tofu is useful in smoothies because it blends into a soft, even base without the curds or chew associated with firmer tofu. Here it meets pineapple and unsweetened soy milk, with toasted coconut added at the end for a little contrast. The result is a pale yellow drink with a tropical flavor and a clearly defined protein-containing foundation. You can make it without protein powder or a flavored smoothie mix.
Gather 3/4 cup drained silken tofu, 3/4 cup pineapple chunks, 1/2 cup unsweetened soy milk, 1 tablespoon unsweetened shredded coconut, and 1 teaspoon lime juice. This makes one substantial smoothie. The coconut is part of the measured batch, not an unlimited garnish. Fresh pineapple is fine, and frozen pineapple makes the drink thicker. If using canned pineapple, drain it before measuring the fruit and do not add the packing liquid to this version.
Start with the coconut so it has time to cool. Put it in a small dry skillet over gentle heat and stir frequently until lightly golden. Remove the pan from the heat as soon as the color changes, since small coconut pieces can darken quickly. Transfer them to a plate instead of leaving them in the hot skillet. You can skip toasting and use the same measured amount of plain shredded coconut if that is more convenient.
Pour the soy milk into the blender, then add the drained tofu, pineapple, and lime juice. Blend until the tofu has disappeared into the fruit mixture. Stop and scrape the sides with the motor off if necessary. Check the texture before adding more liquid; silken tofu is already quite moist. If your blender needs help with frozen fruit, add water a tablespoon at a time rather than repeatedly pouring in unmeasured milk.
Pour the smoothie into a glass and scatter the cooled coconut over the top. A spoon is useful for enjoying the coconut before drinking the rest. Alternatively, blend the coconut into the smoothie for a less distinct topping, although some texture will remain. Taste before adding another acidic ingredient: pineapple and lime already provide a bright flavor. This recipe intentionally leaves out juice and sweetened coconut so the ingredient list remains easy to follow.
Both soy milk and tofu contribute protein, with amounts that vary by brand and tofu style. Check labels if a particular intake matters to you. Firm tofu will not give the same silky result, and replacing soy milk with a different beverage changes the recipe's nutrition and texture. Keep opened tofu and soy milk refrigerated according to their package directions, and blend with clean equipment. Serve soon after preparing for the most consistent texture, or cover and refrigerate a saved portion promptly. Choose a serving that fits your appetite and the rest of your food, rather than treating one glass as a universal meal replacement.
